A filleting knife designed to flex and fit with the shape of the fish being filleted, this knife runs along the backbone well.
Made from 5160 spring steel, the blade exhibits an ability to bend and bounce back, due to its hard wearing strength and flexibility.
Easy to sharpen, it takes and keeps a precision cutting edge and its 10 inch (27 centimeter) length makes it suitable for filleting small to large fish.
The handle is made from a chocolate coloured Brazilian Jarrah wood which sports a bolster and insert made from hygenic and easy to clean Black and white Pearl kirinite. Its softly rounded octagonal shape is designed for ease and comfort as it rests in the hand during long filleting sessions.
All handcrafted knives need to be cleaned and oiled after use to maintain the blade and handle in good condition.
